- 1 lb baby potatoes (red or gold, halved)
- 1 cup baby carrots (or sliced regular carrots)
- 1 cup fresh green beans (trimmed)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried Italian seasoning
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp red pepper flakes (optional)
- 1 tbsp fresh parsley (chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper.
- In a bowl, combine halved baby potatoes and carrots. Drizzle with 1 tablespoon of olive oil.
- Sprinkle minced garlic, dried Italian seasoning, smoked paprika, salt, black pepper, and red pepper flakes over the top.
- Toss everything until well-coated.
- Spread the mixture in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 15 minutes.
- Add the trimmed green beans and remaining tablespoon of olive oil to the bowl, toss to coat, then add to the baking sheet.
- Return to the oven and roast for an additional 10-15 minutes until all vegetables are tender and slightly browned.
- Remove from oven, sprinkle with fresh chopped parsley, and serve.
Notes
For best results, use fresh seasonal vegetables and avoid overcrowding the baking sheet. Feel free to experiment with additional vegetables or spices.
