- 1.5 pounds skinless boneless chicken thighs
- 1 teaspoon salt
- 1 tablespoon Greek yogurt
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- 0.5 teaspoon curry powder
- 3 tablespoons vegetable oil
- 3 tablespoons butter
- 6 cloves garlic, minced
- 1 medium onion, diced
- 1 15-ounce can tomato sauce
- 1 teaspoon sugar
- 0.5 teaspoon black pepper
- 2 cups heavy cream
- Fresh cilantro, chopped
Instructions
- Heat the vegetable oil and 2 tablespoons of butter in a large skillet over medium heat.
- Add the diced onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic, cooking until fragrant, about 1 minute.
- Season the chicken thighs with salt and pepper, then add them to the skillet. Sear the chicken on each side until browned, about 6-8 minutes total.
- Add the garlic powder, sweet paprika, and curry powder, cooking for an additional minute.
- Pour in the tomato sauce and stir in the sugar. Let it simmer for 15 minutes.
- Reduce the heat and stir in the heavy cream, allowing the dish to simmer for another 10 minutes.
- Finish with the remaining tablespoon of butter and garnish with fresh cilantro before serving.
Notes
For added depth of flavor, consider using smoked paprika instead of sweet paprika.
