- 4 large potatoes, peeled and diced
- 1 onion, diced
- 4 slices of bacon, cooked and crumbled
- 4 cups chicken or vegetable broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, cook the diced onions in a little bit of oil over medium heat until translucent.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Transfer half of the soup to a blender and puree until smooth. Return to pot.
- Stir in milk, bacon, and cheese. Cook until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions and additional cheese if desired.
Notes
For a creamier texture, consider adding more milk or using cream. Experiment with different cheeses for varied flavors.
