Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 slices of bacon, cooked and crumbled
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, cook the diced onions in a little bit of oil over medium heat until translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Transfer half of the soup to a blender and puree until smooth. Return to pot.
  4. Stir in milk, bacon, and cheese. Cook until the cheese is melted and the soup is heated through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with green onions and additional cheese if desired.

Notes
