- 1 cup Orzo pasta
- 8 oz Cremini or button mushrooms
- 2 tbsp Olive oil
- 2 cloves Garlic, minced
- 4 cups Vegetable or chicken broth
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- 1 tbsp Fresh thyme or parsley
- to taste Salt
- to taste Black pepper
- 1/2 tsp Red pepper flakes
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the mushrooms and sauté until they soften and begin to brown, about 5-7 minutes.
- Stir in the minced garlic and sauté for another minute, until fragrant.
- Pour in the broth and bring it to a gentle simmer.
- Add the orzo and cook, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and most of the liquid is absorbed.
- Lower the heat and stir in the heavy cream until well combined.
- Mix in the Parmesan cheese, stirring continuously until the cheese melts and the sauce thickens.
- Season with salt, black pepper, and red pepper flakes to taste.
- Remove from heat and garnish with fresh thyme or parsley.
Notes
Feel free to adjust the cream and cheese amount for desired richness. Adding cooked chicken or shrimp can increase protein content.
