Ingredients

  • 8 ounces dry pasta (225g)
  • 8 ounces grape or cherry tomatoes, cut in half (225g)
  • 2 garlic cloves, minced
  • 1/2 yellow onion, thinly sliced
  • 1 small zucchini, chopped and quartered
  • 3 oz cremini mushrooms, sliced (85g)
  • 1/2 teaspoon (3 ml) red pepper flakes (optional)
  • 1/2 teaspoon (3 ml) salt
  • 1 1/4 cup tomato sauce of choice (300ml)
  • 2 1/2 cups water (600ml)
  • 3 ounces fresh spinach (85g)

Instructions

  1. Place the uncooked pasta in a large pot or a deep-sided pan. Add all the other ingredients, except for the spinach, and combine thoroughly. Heat the pot until it starts to boil on high heat.
  2. Once it begins to boil, lower the heat to medium-low and let the pasta cook for 10 to 14 minutes until it reaches an al dente texture. Stir every couple of minutes to ensure nothing sticks to the pan. (Note: Cooking times may differ depending on the pasta type. It is recommended to start checking for doneness based on the shortest time given on the package.)
  3. Turn off the heat and gently incorporate the spinach into the pasta. After the spinach wilts, portion the pasta into serving dishes and add any desired toppings. This dish is best when eaten immediately, but leftovers can be stored in the refrigerator for up to five days.
