- – 2 cups (332 g) diced peaches, fresh or frozen (thawed if frozen)
- – ¾ cup (94 g) all-purpose flour
- – ¼ cup (50 g) packed light brown sugar
- – 1 teaspoon (5 ml) cinnamon
- – 1/4 teaspoon (1 ml) kosher salt
- – 5 tablespoons (75 ml) beef suet, melted
Instructions
- Set the oven to a temperature of 350°F (177°C) and prepare a 9×9-inch baking dish by lining it with parchment paper, ensuring there is extra paper hanging over the edges for easy lifting later.
- Combine the graham cracker crumbs, melted suet, and granulated sugar in a medium bowl, mixing until the texture resembles damp sand. Firmly press this mixture into the base of the lined dish.
- In a large mixing bowl, use a hand mixer to blend the cream cheese, eggs, granulated sugar, vanilla extract, and kosher salt until the mixture is smooth and creamy. Pour this filling evenly over the crust layer.
- Distribute the diced peaches evenly on top of the cream cheese mixture.
- In another medium bowl, whisk together the all-purpose flour, packed light brown sugar, cinnamon, and kosher salt. Add the melted suet and stir until the mixture becomes crumbly.
- Sprinkle this crumbly topping uniformly over the layer of peaches.
- Place the dish in the oven and bake for 35 to 40 minutes, or until the dessert is set.
- Once baked, move the dish to a wire rack to allow it to cool down completely, which will take about an hour. After cooling, place it in the refrigerator for at least another hour until fully chilled.
