  • – 1/4 teaspoon (1 ml) kosher salt
  • – 2 cups (332 g) diced peaches, fresh or frozen (thawed if frozen)
  • – ¾ cup (94 g) all-purpose flour
  • – ¼ cup (50 g) packed light brown sugar
  • – 1 teaspoon (5 ml) cinnamon
  • – 1/4 teaspoon (1 ml) kosher salt
  • – 5 tablespoons (75 ml) beef suet, melted

Instructions

  1. Set the oven to a temperature of 350°F (177°C) and prepare a 9×9-inch baking dish by lining it with parchment paper, ensuring there is extra paper hanging over the edges for easy lifting later.
  2. Combine the graham cracker crumbs, melted suet, and granulated sugar in a medium bowl, mixing until the texture resembles damp sand. Firmly press this mixture into the base of the lined dish.
  3. In a large mixing bowl, use a hand mixer to blend the cream cheese, eggs, granulated sugar, vanilla extract, and kosher salt until the mixture is smooth and creamy. Pour this filling evenly over the crust layer.
  4. Distribute the diced peaches evenly on top of the cream cheese mixture.
  5. In another medium bowl, whisk together the all-purpose flour, packed light brown sugar, cinnamon, and kosher salt. Add the melted suet and stir until the mixture becomes crumbly.
  6. Sprinkle this crumbly topping uniformly over the layer of peaches.
