Ingredients
Scale
- 8 fresh peaches (about 960g) – peeled, pitted and sliced into thin wedges
- 1/4 cup white sugar (60ml)
- 1/4 cup brown sugar (60ml)
- 1/4 teaspoon (1 ml) ground cinnamon
- 1/8 teaspoon (1 ml) ground nutmeg
- 1 teaspoon fresh lemon juice (5ml)
- 2 teaspoons cornstarch (10g)
- 1 cup all-purpose flour (120g)
- 1/4 cup white sugar (60ml)
- 1/4 cup brown sugar (60ml)
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- 6 tablespoons (90 ml) unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water (60ml)
- 3 tablespoons white sugar (45ml)
- 1 teaspoon (5 ml) ground cinnamon
Instructions
- Gather all the necessary ingredients.
- Set your oven to a temperature of 425°F (220°C) to preheat.
- In a large mixing bowl, combine the peach slices with 1/4 cup of white sugar, 1/4 cup of brown sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch; ensure everything is evenly coated, then transfer the mixture into a 2-quart baking dish. Place it in the heated oven for a 10-minute bake.
- While waiting, mix together the flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in another large bowl. Use your fingers or a pastry cutter to incorporate the chilled butter until the mixture achieves a crumbly texture. Gradually add hot water and stir until just mixed.
- Take the peaches out from the oven, and carefully drop spoonfuls of the prepared topping over them.
- In a small bowl, blend 3 tablespoons of white sugar with ground cinnamon; sprinkle this mixture evenly over the entire cobbler.
- Return the dish to the oven and bake until the topping becomes a golden color, roughly 30 minutes.
Notes
- Slice the peaches thinly and evenly for even cooking in the cobbler.
- Be cautious not to overmix the topping to avoid a tough texture.
- Monitor the cobbler closely near the end of baking to prevent the topping from burning. Adjust baking time if necessary.
