  • 6 tablespoons (90 ml) unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water (60ml)
  • 3 tablespoons white sugar (45ml)
  • 1 teaspoon (5 ml) ground cinnamon

Instructions

  1. Gather all the necessary ingredients.
  2. Set your oven to a temperature of 425°F (220°C) to preheat.
  3. In a large mixing bowl, combine the peach slices with 1/4 cup of white sugar, 1/4 cup of brown sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch; ensure everything is evenly coated, then transfer the mixture into a 2-quart baking dish. Place it in the heated oven for a 10-minute bake.
  4. While waiting, mix together the flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in another large bowl. Use your fingers or a pastry cutter to incorporate the chilled butter until the mixture achieves a crumbly texture. Gradually add hot water and stir until just mixed.
  5. Take the peaches out from the oven, and carefully drop spoonfuls of the prepared topping over them.
  6. In a small bowl, blend 3 tablespoons of white sugar with ground cinnamon; sprinkle this mixture evenly over the entire cobbler.
  7. Return the dish to the oven and bake until the topping becomes a golden color, roughly 30 minutes.
