- 1 pound (450g) ground beef
- 1 packet (approx. 1 oz / 28g) taco seasoning
- 1/2 cup (120ml) water
- 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
- 1 (15 ounce / 425g) can black beans, rinsed and drained
- 1 (15 ounce / 425g) can corn, drained
- 8–10 flour tortillas, cut into bite-sized pieces
- 2 cups (220g) shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer for about 5 minutes or until it thickens slightly.
- Add the can of diced tomatoes and green chilies, black beans, and corn. Stir to combine.
- Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
- Layer some tortilla pieces on top of the beef mixture.
- Sprinkle a layer of cheddar cheese over the tortillas.
- Repeat the layers until all ingredients are used, ending with cheese on top.
- Bake for 20-25 minutes, or until the cheese is bubbly and melted.
- Let the casserole rest for a few minutes before serving.
