Ingredients

  • 1 pound (450g) ground beef
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce / 425g) can black beans, rinsed and drained
  • 1 (15 ounce / 425g) can corn, drained
  • 810 flour tortillas, cut into bite-sized pieces
  • 2 cups (220g) shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer for about 5 minutes or until it thickens slightly.
  4. Add the can of diced tomatoes and green chilies, black beans, and corn. Stir to combine.
  5. Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
  6. Layer some tortilla pieces on top of the beef mixture.
  7. Sprinkle a layer of cheddar cheese over the tortillas.
  8. Repeat the layers until all ingredients are used, ending with cheese on top.
  9. Bake for 20-25 minutes, or until the cheese is bubbly and melted.
  10. Let the casserole rest for a few minutes before serving.
