Quick and easy egg and cheese toasts that are crispy, cheesy, and perfect for breakfast or a snack.
Ingredients

- 2 slices of hearty sandwich bread (no large holes)
- 1 large egg
- 1/2 cup (2 ounces) of grated cheese (cheddar, pepper jack, or gruyere)
- 1 teaspoon of finely chopped fresh herbs (thyme or rosemary)
- Salt and black pepper to taste
- A pinch of cayenne (optional)
Instructions
- Lightly toast the bread or broil each side for 1–2 minutes until just beginning to brown.
- Preheat the oven to 400°F (for toaster oven, use the bottom rack on the BAKE setting).
- In a small bowl, beat the egg until completely combined.
- Stir in the cheese, fresh herbs, salt, and pepper, mixing thoroughly.
- Spread the mixture to the edges of the toasted bread; sprinkle cayenne if desired.
- Bake for 10–12 minutes until puffed and golden.
Notes
Experiment with different cheeses and add sautéed vegetables for extra flavor and nutrients.
