Ingredients

  • – 1 pound lean ground beef (454 g)
  • – 1/2 cup breadcrumbs (60 g)
  • – 1/4 cup grated onion (60 g)
  • – 1/4 cup grated carrot (40 g)
  • – 1 tablespoon Dijon mustard (15 ml)
  • – 1/2 teaspoon garlic powder (2.5 ml)
  • – 1/2 teaspoon chili powder (2.5 ml)
  • – 1/2 teaspoon salt (2.5 ml)
  • – 1 egg (lightly beaten)
  • – 1/4 cup tomato sauce (60 ml)

Instructions

  1. Set your oven to 350°F and coat a nonstick muffin tin with a nonstick cooking spray.
  2. In a large mixing bowl, combine all the ingredients except for the tomato sauce, using clean hands or a spoon to ensure they are well combined.
  3. Distribute the mixture evenly among the muffin tin cups, placing about 1/4 cup into each and pressing down lightly.
  4. Spread a layer of tomato sauce on top of each portion.
  5. Place in the oven and cook for 20-24 minutes, or until a meat thermometer inserted in the center reaches 160°F.
  6. Allow the mini meatloaves to rest for 2 minutes in the tin, then use a knife if necessary to help move them to a serving plate. Enjoy them warm.

Notes

  • Consider using whole wheat breadcrumbs instead of regular ones for added fiber in the mini meatloaves.
  • Experiment with various types of mustard like whole grain or spicy brown to alter the dish’s flavor.
  • For a spicier taste, add a pinch of cayenne pepper or red pepper flakes to the meat mixture before baking.
