Ingredients
- – 4 (1134g) boneless skinless chicken breasts
- – 2 tsp (10ml) paprika
- – 1 tsp (5ml) oregano
- – 1 tsp (5ml) garlic powder
- – 1/2 tsp (2.5ml) onion powder
- – 1/2 tsp (2.5ml) salt
- – 1/4 tsp (1.25ml) black pepper
- – 2 tbsp (30ml) olive oil
- – 5 oz (142g) frozen chopped spinach, thawed and squeezed dry
- – 1/2 cup (120ml) crumbled feta cheese
- – 1/4 cup (60ml) ricotta cheese
- – 2 tbsp (30ml) chopped scallions
- – 2 garlic cloves, minced
- – 1/2 tsp (2.5ml) dried dill
Instructions
- Set your oven to 400°F to preheat.
- Use a paper towel to dry the chicken. Cut a horizontal pocket in the thick part of each chicken breast, being careful not to cut all the way through.
- In a small bowl, mix together the paprika, oregano, garlic powder, onion powder, salt, and black pepper. Coat the chicken breasts with this blend, ensuring both sides are covered.
- In another bowl, combine the thawed spinach, crumbled feta, ricotta, chopped scallions, minced garlic, and dried dill. Stuff this mixture into the pockets of the chicken breasts and secure the openings with toothpicks.
- Heat a large, oven-safe skillet over medium-high heat and add olive oil. Place the stuffed chicken in the skillet, cooking each side until it turns a light golden brown, about 3 to 4 minutes per side.
- Move the skillet to the oven and bake without covering until the chicken is fully cooked, approximately 15 to 18 minutes. If needed, broil for an extra 1 to 2 minutes to achieve a nicely browned crust.
