Ingredients

  • 1 cup milk

  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the mashed sweet potatoes, flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  2. Whisk together the milk, egg, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Preheat a skillet over medium heat and grease with butter or oil.
  5. Pour about 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until browned on the other side.
