Instructions
- Combine the mashed sweet potatoes, flour, sugar, baking powder, cinnamon, and salt in a large bowl.
- Whisk together the milk, egg, melted butter, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Preheat a skillet over medium heat and grease with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until browned on the other side.
- Serve warm with your favorite toppings.
Notes
Let the batter rest for about five minutes before cooking for fluffier pancakes. Adjust cooking time based on skillet heat.
