Instructions
- Prepare all the necessary items.

- In a large mixing vessel, blend the sliced peaches with 60g white sugar, 55g brown sugar, 1.25g ground cinnamon, 0.625g ground nutmeg, 5ml lemon juice, and 10ml cornstarch. Stir until the peaches are well coated, then transfer to a 2-quart baking dish. Place in the preheated oven for a duration of 10 minutes.
- During this time, mix together the flour, 60g white sugar, 55g brown sugar, baking powder, and salt in another large bowl. Using your fingers or a pastry tool, incorporate the butter into the dry mixture until it looks like coarse crumbs. Pour in the boiling water and combine until just mixed.
- After removing the peaches from the oven, distribute spoonfuls of the topping mixture over them.
- In a small bowl, blend 45g white sugar with 5g ground cinnamon; evenly scatter this mixture over the entire cobbler.
- Return to the oven and bake until the topping achieves a golden hue, approximately 30 minutes.
