Instructions

  1. Line a 9×5-inch loaf pan with plastic wrap, leaving enough overhang on all sides to later lift the cake out.
  2. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy (about 2 minutes). Add the powdered sugar and vanilla extract, continuing to beat until well combined.
  3. In a separate bowl, whip the heavy cream with granulated sugar until stiff peaks form (3-4 minutes with an electric mixer).
  4. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, using an under-and-over motion to maintain air in the whipped cream.
  5. In a small bowl, warm the berry preserves for 15-20 seconds in the microwave. Stir in the fresh berries to coat them lightly.
  6. Spread a thin layer of the cheesecake mixture on the bottom of the prepared pan. Arrange a layer of cookies to cover completely, breaking some if needed to fit.
  7. Continue layering with cheesecake mixture, berries, and cookies. Aim for 3-4 complete sets of layers, ending with the cheesecake mixture on top.
  8. Cover with plastic wrap and freeze for at least 6 hours or overnight.
