Ingredients

- – 2 medium zucchini, spiralized + dried with paper towels
- – 1/2 cup (75 g) cherry tomatoes, halved
- – 6 large scallops, patted dry

Instructions
- In a blender or food processor, combine the ripe avocados, fresh basil leaves, garlic cloves, and lemon juice. Season with salt and pepper to your liking. As you blend, gradually incorporate the olive oil until the mixture becomes smooth, creamy, and fully blended. Set this mixture aside.
- Generously coat the scallops with salt and pepper. Using a skillet, sear the scallops for 2 to 3 minutes on each side, or until they are opaque and thoroughly cooked. Set these aside.
- Heat a skillet and quickly stir-fry the spiralized zucchini for 2-3 minutes, ensuring they retain their crunchy texture. Avoid adding salt or cooking them for more than 5 minutes. Remove from heat promptly and place them in a bowl.
- Drizzle the creamy avocado mixture over the zucchini noodles in the bowl and mix well to ensure they are evenly coated. Distribute the noodles onto two serving plates, placing three scallops and cherry tomato halves on top of each. Enjoy your meal!
