- 1.5 pounds sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon olive oil
- 2 teaspoons fresh thyme leaves

- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 8 ounces medium pasta shells
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1.5 cups whole milk
- 1/2 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/4 cup cream cheese
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons fresh basil, chopped
Instructions
- Pat steak cubes dry and season with salt and pepper.
- Bring salted water to boil and cook pasta shells until al dente (8-10 minutes). Reserve 1/2 cup pasta water before draining.
- In a medium saucepan, melt 2 tablespoons butter, add 2 cloves minced garlic and sauté for 30 seconds. Add flour and whisk for 1-2 minutes to create a roux.
- Gradually whisk in milk and cream. Simmer until slightly thickened (3-4 minutes).
- Add cream cheese and stir until melted. Incorporate Parmesan cheese gradually. Season with onion powder, nutmeg, salt, and pepper. Keep warm.
- Heat olive oil in a large skillet over high heat. Cook steak cubes in batches for 1-2 minutes per side for medium-rare to medium. Transfer to a plate.
- Reduce heat to medium-low. Add 4 tablespoons butter, 6 cloves minced garlic, thyme, and rosemary. Sauté for 30-60 seconds.
- Add lemon juice to deglaze the pan. Return steak to the skillet and toss to coat in the garlic butter. Cook for 30 seconds more.
- Combine drained pasta with the Parmesan sauce, adding pasta water if needed to adjust consistency.
- Serve pasta topped with steak bites. Garnish with parsley and basil.
