Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat two tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened.
  2. Stir in one teaspoon of cumin, along with the drained chickpeas, salt, and pepper. Cook for a few minutes to allow the flavors to meld together.
  3. Add the four cups of vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and allow it to simmer for 20 minutes.
  4. Use an immersion blender to puree the soup to your desired consistency. If you prefer a chunky soup, blend only half of it.
  5. Serve hot, garnished with fresh parsley. Enjoy the vibrant flavors of garlic chickpea soup.

Notes

For a creamier consistency, consider adding a splash of non-dairy milk or coconut cream during blending. Experiment with spices like paprika or smoked pepper for added depth.
