- 1 can chickpeas, drained and rinsed
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat two tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened.
- Stir in one teaspoon of cumin, along with the drained chickpeas, salt, and pepper. Cook for a few minutes to allow the flavors to meld together.
- Add the four cups of vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and allow it to simmer for 20 minutes.
- Use an immersion blender to puree the soup to your desired consistency. If you prefer a chunky soup, blend only half of it.
- Serve hot, garnished with fresh parsley. Enjoy the vibrant flavors of garlic chickpea soup.
Notes
For a creamier consistency, consider adding a splash of non-dairy milk or coconut cream during blending. Experiment with spices like paprika or smoked pepper for added depth.
