- 1 medium delicata squash, halved lengthwise, seeds removed, and cut into 1/2-inch slices (approximately 3 cups or 300 g sliced)
- 1/3 cup panko breadcrumbs
- 2 tablespoons fresh parsley, very finely minced (optional)
- 1 ½ tablespoons nutritional yeast
- 3/4 teaspoon dried rosemary
- 1/2–3/4 teaspoon sea salt (to taste)
- 3/4 teaspoon garlic powder
- 3 tablespoons olive oil
Instructions
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Prepare the delicata squash by slicing it into 1/2-inch pieces.
- Mix the panko breadcrumbs, parsley, nutritional yeast, rosemary, sea salt, and garlic powder in a small bowl.
- Coat each slice of squash in olive oil, then in the breadcrumb mixture. Press lightly to adhere.
- Place the coated squash slices on the prepared baking sheet.
- Bake for 14-16 minutes, or until breadcrumbs are golden and squash is fork-tender.
Notes
Serve immediately for the best texture. Try adding cayenne for heat or swapping herbs for unique flavors.
