  • 1 medium delicata squash, halved lengthwise, seeds removed, and cut into 1/2-inch slices (approximately 3 cups or 300 g sliced)
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, very finely minced (optional)
  • 1 ½ tablespoons nutritional yeast
  • 3/4 teaspoon dried rosemary
  • 1/23/4 teaspoon sea salt (to taste)
  • 3/4 teaspoon garlic powder
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Prepare the delicata squash by slicing it into 1/2-inch pieces.
  3. Mix the panko breadcrumbs, parsley, nutritional yeast, rosemary, sea salt, and garlic powder in a small bowl.
  4. Coat each slice of squash in olive oil, then in the breadcrumb mixture. Press lightly to adhere.
  5. Place the coated squash slices on the prepared baking sheet.
  6. Bake for 14-16 minutes, or until breadcrumbs are golden and squash is fork-tender.

Notes

Serve immediately for the best texture. Try adding cayenne for heat or swapping herbs for unique flavors.
