- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Wash the baby potatoes and halve them.
- Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes if desired.
- Place the halved potatoes in the bottom of the crockpot.
- Layer the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over everything.
- Sprinkle the minced garlic evenly across the chicken and add the grated parmesan cheese.
- Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
- Check for doneness at 165°F (75°C) and ensure the potatoes are fork-tender.
- Remove from the crockpot and serve, topping with any remaining sauce and fresh parsley if desired.
Notes
Adjust seasoning and try adding vegetables like carrots or bell peppers for additional flavors. Store leftovers in an airtight container for up to three days.
