Instructions

  1. Boil a large pot of salted water and cook the potato gnocchi according to the package instructions or until they float to the top, usually within 2-3 minutes.
  2. Heat the olive oil in a large skillet over medium heat and add bacon, cooking until crispy, about 5-7 minutes.
  3. Add the chopped garlic to the bacon and cook for an additional minute, until fragrant but not browned.
  4. Whisk together the eggs, grated Parmesan cheese, salt, and black pepper in a bowl.
  5. Reserve 1 cup of the pasta water, then drain the cooked gnocchi.
  6. Quickly add the hot gnocchi to the skillet with bacon and garlic, then remove from heat.
  7. Pour the egg and cheese mixture over the gnocchi, tossing quickly to create a creamy sauce. Gradually add reserved pasta water to achieve the desired consistency.
  8. Stir in the chopped parsley and serve immediately, garnished with additional cheese if desired.
