Instructions
- Boil a large pot of salted water and cook the potato gnocchi according to the package instructions or until they float to the top, usually within 2-3 minutes.
- Heat the olive oil in a large skillet over medium heat and add bacon, cooking until crispy, about 5-7 minutes.
- Add the chopped garlic to the bacon and cook for an additional minute, until fragrant but not browned.
- Whisk together the eggs, grated Parmesan cheese, salt, and black pepper in a bowl.
- Reserve 1 cup of the pasta water, then drain the cooked gnocchi.
- Quickly add the hot gnocchi to the skillet with bacon and garlic, then remove from heat.
- Pour the egg and cheese mixture over the gnocchi, tossing quickly to create a creamy sauce. Gradually add reserved pasta water to achieve the desired consistency.
- Stir in the chopped parsley and serve immediately, garnished with additional cheese if desired.
