  • Vegetables (olives, cherry tomatoes, bell peppers)

Instructions

  1. Gather all your ingredients and pat the chicken dry with paper towels.
  2. In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper. Add your choice of herbs/spices.
  3. Pour the marinade over the chicken, ensuring even coverage. Marinate for at least 30 minutes.
  4. Preheat your oven to 425°F (220°C) or heat your skillet on medium-high.
  5. If roasting, place the marinated chicken in a baking dish surrounded by vegetables. If pan-frying, add chicken to the hot skillet.
  6. Cook until the chicken reaches an internal temperature of 165°F (75°C), about 25-30 minutes in the oven.
  7. Let the chicken rest for 5-10 minutes before serving to retain juices.

Notes

Using a meat thermometer helps ensure the chicken is cooked perfectly. Brining can also keep chicken moist.
