- 2 tablespoons lemon juice

- Vegetables (olives, cherry tomatoes, bell peppers)
Instructions
- Gather all your ingredients and pat the chicken dry with paper towels.
- In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper. Add your choice of herbs/spices.
- Pour the marinade over the chicken, ensuring even coverage. Marinate for at least 30 minutes.
- Preheat your oven to 425°F (220°C) or heat your skillet on medium-high.
- If roasting, place the marinated chicken in a baking dish surrounded by vegetables. If pan-frying, add chicken to the hot skillet.
- Cook until the chicken reaches an internal temperature of 165°F (75°C), about 25-30 minutes in the oven.
- Let the chicken rest for 5-10 minutes before serving to retain juices.
Notes
Using a meat thermometer helps ensure the chicken is cooked perfectly. Brining can also keep chicken moist.
