  • ½ cup mayonnaise
  • 4 ounces cream cheese (softened)
  • ½ cup chopped water chestnuts
  • ¼ cup finely diced red onion
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder
  • Salt (to taste)
  • Black pepper (to taste)
  • Optional: ¼ cup grated Parmesan cheese

Instructions

  1. Thaw the frozen spinach completely, using a microwave if necessary. Squeeze out excess water.
  2. Soften the cream cheese by allowing it to reach room temperature or microwaving it in short intervals.
  3. In a mixing bowl, blend the softened cream cheese and Greek yogurt until smooth.
  4. Add mayonnaise and lemon juice to the mixture and stir until combined.
  5. Stir in minced garlic, diced red onion, dried dill, and onion powder until well distributed.
  6. Mix in the prepared spinach and chopped water chestnuts gently to avoid overmixing.
  7. Season with salt and black pepper to taste, and fold in grated Parmesan cheese if using.
  8. Chill the dip in an airtight container for at least 2 hours to allow flavors to meld.
  9. Serve cold with your favorite dippers and garnish as desired.
