Ingredients

Scale
  • 1 1/2 pounds (680 g) beef steak
  • 1/4 cup (60 ml) apple cider vinegar
  • 2 tablespoons (30 ml) vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) dried Italian herbs
  • Salt, to taste
  • Black pepper, to taste
  • 6 cups (180 g) mixed salad greens
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (165 g) cooked corn kernels
  • 1/2 cup (60 g) crumbled feta cheese
  • 1/4 cup (60 g) red onion, thinly sliced
  • 2 tablespoons (30 g) toasted pine nuts
  • 1 avocado, sliced
  • 1 lemon, juiced (about 2 tablespoons or 30 ml)

Instructions

  1. In a bowl, combine balsamic vinegar, olive oil, minced garlic, dried Italian herbs, salt, and black pepper to create a marinade.
  2. Place the flank steak in a shallow dish and pour the marinade over it, ensuring it’s well-coated.
  3. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the steak from the marinade and allow excess marinade to drip off.
  6. Grill the steak for about 5-6 minutes per side, or until it reaches your desired doneness.
  7. Transfer the steak to a cutting board and let it rest for 5-10 minutes before slicing.
  8. In a large salad bowl, combine the mixed greens, cherry tomatoes, sweet corn, red onion, and pine nuts.
  9. Add the crumbled Gorgonzola cheese to the salad mixture.
  10. Slice the rested steak thinly against the grain.
  11. Arrange the sliced steak over the salad mixture.
  12. Top the salad with avocado slices.
  13. Drizzle lemon juice over the entire salad for added brightness.
  14. Toss gently to combine all ingredients evenly.
  15. Season the salad with additional salt and black pepper if needed.
  16. Serve immediately, ensuring each serving includes a bit of steak, greens, and toppings.

Notes

  • Consider using a leaner cut like sirloin or tenderloin for a lighter option.
  • Customize the salad with vegetables like bell peppers or fruits like strawberries.
  • To make it dairy-free, omit feta cheese or use a dairy-free alternative like nutritional yeast.
