- Tarragon, fresh, chopped, 1 tablespoon (15 ml) (15 grams)
- Egg yolks, 2
- Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
- Water, 1 tablespoon (15 ml) (15 milliliters)
- White pepper, 1/4 teaspoon (1 ml) (1 gram)
Instructions
- Preheat your grill to medium-high heat.
- Season the beef tenderloin with salt and black pepper.
- Brush the beef tenderloin with 1 tablespoon of olive oil.
- Place the beef tenderloin on the grill and cook for 4-5 minutes on each side for medium-rare.
- Remove the beef from the grill and let it rest for 10 minutes.
- While the beef rests, slice the baguette into 1/2-inch slices.
- Brush each slice of baguette with the remaining olive oil.
- Grill the baguette slices for 1-2 minutes on each side until toasted.
- In a saucepan, melt the butter over medium heat.
- Add the chopped shallots to the butter and sauté until soft.
- Stir in the chopped tarragon and remove from heat.
- In a metal or glass bowl, whisk together egg yolks, lemon juice, and water.
- Place the bowl over a pot of simmering water, ensuring it doesn’t touch the water.
- Whisk the egg mixture constantly until it thickens.
- Slowly whisk in the melted butter and shallots mixture until smooth.
- Add white pepper to the sauce and whisk to combine.
- Slice the rested beef tenderloin thinly.
- Place a slice of beef on each toasted baguette slice.
- Drizzle the béarnaise sauce over the beef crostini.
- Garnish with additional fresh tarragon if desired.
