  • Black pepper, 1 teaspoon (5 ml) (5 grams)
  • Unsalted butter, 1/4 cup (60 ml) (57 grams)
  • Onion, finely chopped, 2 tablespoons (30 ml) (30 grams)
  • Tarragon, fresh, chopped, 1 tablespoon (15 ml) (15 grams)
  • Egg yolks, 2
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Water, 1 tablespoon (15 ml) (15 milliliters)
  • White pepper, 1/4 teaspoon (1 ml) (1 gram)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the beef tenderloin with salt and black pepper.
  3. Brush the beef tenderloin with 1 tablespoon of olive oil.
  4. Place the beef tenderloin on the grill and cook for 4-5 minutes on each side for medium-rare.
  5. Remove the beef from the grill and let it rest for 10 minutes.
  6. While the beef rests, slice the baguette into 1/2-inch slices.
  7. Brush each slice of baguette with the remaining olive oil.
  8. Grill the baguette slices for 1-2 minutes on each side until toasted.
  9. In a saucepan, melt the butter over medium heat.
  10. Add the chopped shallots to the butter and sauté until soft.
  11. Stir in the chopped tarragon and remove from heat.
  12. In a metal or glass bowl, whisk together egg yolks, lemon juice, and water.
  13. Place the bowl over a pot of simmering water, ensuring it doesn’t touch the water.
  14. Whisk the egg mixture constantly until it thickens.
  15. Slowly whisk in the melted butter and shallots mixture until smooth.
  16. Add white pepper to the sauce and whisk to combine.
  17. Slice the rested beef tenderloin thinly.
  18. Place a slice of beef on each toasted baguette slice.
  19. Drizzle the béarnaise sauce over the beef crostini.
  20. Garnish with additional fresh tarragon if desired.
