Delicious grilled lobster rolls perfect for summer gatherings, combining succulent lobster with buttery, toasted brioche buns.

  • 2 lobsters (live or pre-steamed)
  • ¼ cup garlic (finely diced)
  • 6 brioche hot dog buns
  • 1 stick butter (salted)
  • Salt and pepper (to taste)
  • Parsley (chopped, for serving)
  • Lemon juice (for serving)

Instructions

  1. Begin by filling a large pot with water, setting it to boil vigorously.
  2. Carefully add the lobsters to the boiling water, ensuring they are submerged. Cover the pot with a lid.
  3. Boil the lobsters for 11-12 minutes, keeping an eye on the internal temperature to reach 135°F.
  4. Once cooked, remove the lobsters from the pot and place them on a cutting board to cool.
  5. After they are cool enough to handle, extract the lobster meat and chop it into bite-sized pieces.
  6. Pre-heat half of a griddle or skillet to low, while setting the other half to medium-high.
  7. Butter the brioche buns and toast them on the low side of the griddle.
  8. Set a cast iron skillet on the medium-high side of the griddle and melt the remaining butter.
  9. Add the diced garlic and sauté for about 7 minutes until fragrant.
  10. Toss the chopped lobster into the skillet and combine, ensuring it’s heated through.
  11. Season the mixture with salt and pepper to taste.
  12. Grab a toasted brioche bun and fill it with the heated lobster mix.
  13. Garnish each roll with fresh parsley and a squeeze of lemon juice for that final zing.

Notes

For a lighter option, consider using less butter and a squeeze of olive oil instead. Pair with a light salad or sweet potato fries.
