  • – 5 large eggs, lightly beaten
  • – ½ cup (120 ml) almond milk
  • – ¼ tsp (1.25 ml) crushed red peppers
  • – 1 tablespoon (15 ml) dried parsley
  • – Salt and pepper
  • – Roasted cashews
  • – Berries

Instructions

  1. Set your oven to preheat at 400°F.
  2. Warm the oil in a 9-inch cast iron pan over medium-high heat.
  3. Introduce the onion, cooking it until it starts to turn a light golden hue.
  4. Incorporate the peppers, allowing them to cook for 3-5 minutes.
  5. Add the roasted sweet potato and spinach, mixing thoroughly and cooking for an additional minute.
  6. In a separate bowl, blend together the eggs, almond milk, crushed red peppers, dried parsley, salt, and pepper until well combined.
  7. Pour the egg mixture over the vegetables in the cast iron pan, ensuring the eggs are evenly distributed.
  8. Once the edges of the frittata begin to solidify, transfer the pan to the oven.
  9. Allow it to bake for approximately 10-15 minutes, or until the frittata is fully cooked through.
