Ingredients

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, carrots, and celery; sauté until softened.
- Cook chicken pieces until browned.
- Stir in butternut squash and baby potatoes.
- Add chicken broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer until chicken and vegetables are tender, about 30–40 minutes.
- Remove bay leaf before serving.
