Ingredients

  • 1/4 cup vegetable oil (60 ml)
  • 1/4 cup tahini (60 g)
  • 2 to 3 tablespoons lemon juice, to taste (30 to 45 ml)
  • 2 teaspoons mustard (10 g)
  • 2 teaspoons maple syrup or honey (10 ml)
  • 1/2 teaspoon (3 ml) fine sea salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons ice-cold water, more as needed (30 ml)

Instructions

  1. Place the vegetable oil, tahini, 2 tablespoons of lemon juice, mustard, honey, salt, and a few grinds of black pepper into a measuring cup or jar. Stir vigorously until the mixture is well combined.
  2. Pour in the ice-cold water and stir again. The mixture should become exceptionally smooth and creamy. Taste the dressing, and if you want more tanginess, add additional lemon juice and black pepper. If the dressing is too thick to pour, incorporate more cold water, one tablespoon at a time, until you achieve the desired consistency. Serve immediately!
  3. This dressing can be stored in the fridge, covered, for up to a week. It may become thicker over time; simply mix in a bit more cold water to thin it out as needed.
