Ingredients
- – 1/3 cup (110g) Honey
- – 1 1/2 tsp (8 ml) Hot Sauce (I like Frank’s or Cholula)
- – 3/4 tsp (4 ml) Chilli Flakes
- – 2x 250g (9oz) Chicken Breasts
- – 2 tsp (10 ml) Paprika
- – 1 tsp (5 ml) Salt
- – 1/2 tsp (3 ml) EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
- – 1/4 tsp (1 ml) Cayenne Pepper
- – 35g (1/4 cup) Plain Flour
- – 2 Eggs, beaten
- – 65g (1 cup) Panko Breadcrumbs
- – Vegetable Oil, as needed (6-8 tbsp (105 ml))
- – 200g (7oz) Feta, crumbled
Instructions
- Mix the honey, hot sauce, and chili flakes in a bowl and heat in the microwave for about 20 seconds. Stir well and allow it to cool. Alternatively, you can do this on the stove by bringing it to a simmer in a small pot, then removing it to cool. Adjust the spice level with more chili flakes or hot sauce if you prefer.
- Slice the chicken breasts horizontally through the middle to make four pieces of equal size. In another small pot or bowl, combine the paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
- Prepare three large shallow dishes in a row and place a large tray at the end. The first dish should have flour mixed with half of the seasoning blend, the second dish should contain the beaten eggs, and the third dish should have Panko combined with the remaining seasoning. Take each chicken piece and coat it first in the flour, then the egg, and finally the breadcrumbs, ensuring each piece is well covered, especially with the breadcrumbs, and place them on the tray.
- Pour enough oil to cover the bottom of a large pan and heat over medium-high heat. Once the oil is hot enough for a breadcrumb to sizzle quickly, gently add the chicken pieces (if all four don’t fit, cook in two batches and add more oil as needed). Cook for 3-4 minutes per side until the outside is golden and crispy and the inside is thoroughly cooked and hot. Place the cooked chicken on a wire rack set above the tray.
- Sprinkle the crumbled feta over the chicken, covering it as much as possible, and place under a hot grill until the feta begins to turn golden, becoming soft and slightly crispy on top.
- Serve with your desired amount of hot honey drizzled over the chicken and enjoy. Keep any leftover honey in the fridge, tightly sealed.
