  • 6 large corn tortillas, quartered
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 1 cup sour cream
  • 1 can chopped green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • Cilantro and lime wedges, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch dish.
  2. Combine in a mixing bowl the shredded cooked chicken, drained black beans, diced tomatoes with green chilies, tomato sauce, and sour cream.
  3. Stir in the chopped green chilies, cumin, chili powder, garlic powder, salt, and pepper.
  4. Spread the filling evenly in the greased dish.
  5. Layer with the quartered tortillas, followed by a generous sprinkle of shredded cheddar cheese.
  6. Repeat these layers, finishing with a final layer of cheese on top.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Uncover the casserole and bake for an additional 10-15 minutes to achieve a beautifully golden cheese top.
  9. Allow the casserole to cool slightly before garnishing with fresh cilantro and serving with lime wedges.

Notes

Consider using homemade shredded chicken for a richer flavor. You can customize ingredients by substituting black beans with pinto beans or adding corn for sweetness.
