- 6 large corn tortillas, quartered
- 1 can black beans, drained
- 1 can diced tomatoes with green chilies
- 1 cup tomato sauce
- 1 cup sour cream
- 1 can chopped green chilies

- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- Cilantro and lime wedges, for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch dish.
- Combine in a mixing bowl the shredded cooked chicken, drained black beans, diced tomatoes with green chilies, tomato sauce, and sour cream.
- Stir in the chopped green chilies, cumin, chili powder, garlic powder, salt, and pepper.
- Spread the filling evenly in the greased dish.
- Layer with the quartered tortillas, followed by a generous sprinkle of shredded cheddar cheese.
- Repeat these layers, finishing with a final layer of cheese on top.
- Cover the dish with foil and bake for 25 minutes.
- Uncover the casserole and bake for an additional 10-15 minutes to achieve a beautifully golden cheese top.
- Allow the casserole to cool slightly before garnishing with fresh cilantro and serving with lime wedges.
Notes
Consider using homemade shredded chicken for a richer flavor. You can customize ingredients by substituting black beans with pinto beans or adding corn for sweetness.
