Ingredients

Scale
  • 1/4 cup (60 ml) unsalted butter
  • 1/2 cup (100 g) brown sugar
  • 1 teaspoon (5 ml) ground cloves (optional)
  • 2 cups (300 g) sliced peaches (34 medium peaches)
  • 1 1/4 cups (150 g) flour
  • 1 1/2 teaspoons (7.5 ml) baking powder
  • 1/4 teaspoon (1.25 ml) salt
  • 1/2 cup (120 g) unsalted butter, softened
  • 1 cup (200 g) white sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 2 large eggs
  • 1/2 cup (120 ml) buttermilk

Instructions

  1. Set your oven to 350ºF and let it heat up. Gently coat an 8 or 9-inch circular baking dish with non-stick spray. Place a round piece of parchment paper at the bottom of the dish.
  2. For the topping, melt the butter and combine it with brown sugar and cloves.
  3. Pour this mixture into the base of an 8-inch baking pan.
  4. Arrange the peach slices over the sugar mixture and set the pan aside.
  5. For the cake, mix together the flour, baking powder, and salt in a small bowl and keep it ready.
  6. Whisk the butter and sugar together until the mixture becomes light and airy.
  7. Incorporate the vanilla extract and eggs, and blend until everything is well mixed.
  8. Mix in the buttermilk, followed by the flour combination.
  9. Spread the cake batter over the peach layer, and bake it in the middle of the oven for 45 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • For a more flavorful topping, consider adding a hint of ground cloves to the mixture before pouring it into the pan.
  • Slice the peaches uniformly for even cooking and an attractive final presentation.
  • Prevent sticking by coating the pan with non-stick spray and lining it with parchment paper before assembling the ingredients.
