Ingredients

  • 1 lb Italian sausage
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Bell pepper, chopped
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 can (14.5 oz) Diced tomatoes
  • 4 cups Chicken broth
  • 2 tsp Italian seasoning
  • 8 oz Pasta (your choice)
  • 2 cups Fresh spinach

Instructions

  1. In a large pot over medium heat, brown the Italian sausage until fully cooked, breaking it apart with a spoon.
  2. Add the chopped onions, garlic, bell peppers, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the diced tomatoes and chicken broth, bringing the mixture to a boil.
  4. Add Italian seasoning and season with salt and pepper to taste.
  5. Lower the heat and let the soup simmer for about 15 minutes.
  6. Add the pasta to the pot, cooking until al dente.
  7. Finally, stir in the fresh spinach until wilted.
  8. Serve hot and enjoy!

Notes

For added creaminess, sprinkle some grated cheese before serving. Leftovers store beautifully for up to three days in the refrigerator.
