- 1 lb Italian sausage
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 Bell pepper, chopped
- 2 Carrots, diced
- 2 Celery stalks, diced
- 1 can (14.5 oz) Diced tomatoes
- 4 cups Chicken broth
- 2 tsp Italian seasoning
- 8 oz Pasta (your choice)
- 2 cups Fresh spinach
Instructions
- In a large pot over medium heat, brown the Italian sausage until fully cooked, breaking it apart with a spoon.
- Add the chopped onions, garlic, bell peppers, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the diced tomatoes and chicken broth, bringing the mixture to a boil.
- Add Italian seasoning and season with salt and pepper to taste.
- Lower the heat and let the soup simmer for about 15 minutes.
- Add the pasta to the pot, cooking until al dente.
- Finally, stir in the fresh spinach until wilted.
- Serve hot and enjoy!
Notes
For added creaminess, sprinkle some grated cheese before serving. Leftovers store beautifully for up to three days in the refrigerator.
