  • – 1/2 teaspoon (3 ml) garlic, minced
  • – 1/2 teaspoon (3 ml) kosher salt
  • – 1/8 teaspoon (1 ml) black pepper
  • – 1/8 teaspoon (1 ml) red pepper flakes
  • – 2 pounds (900 g) boneless, skinless chicken thighs
  • – 1 teaspoon (5 ml) kosher salt
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1/2 teaspoon (3 ml) chili powder
  • – 2 tablespoons (30 ml) extra virgin olive oil
  • – 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Combine the glaze components in a medium-sized bowl. Stir until well blended and set aside.
  2. Dry the chicken thoroughly with paper towels.
  3. In a separate small bowl, mix together the kosher salt, black pepper, and chili powder.
  4. Rub this spice mixture evenly over the surface of the chicken pieces.
  5. Heat a large nonstick frying pan over a medium flame and add some oil. Once the oil is hot, place the chicken thighs in the pan. If necessary, cook in multiple rounds based on the pan’s capacity. Sear the chicken for 5 minutes, then turn them over, lower the heat to medium-low, and continue cooking for another 5 minutes or until the chicken’s internal temperature hits 165°F. Remove the chicken from the pan and place on a plate, covering it loosely to retain warmth.
  6. In the same pan, increase the heat back to medium and toss in the jalapeno slices. Sauté for 3 minutes.
  7. Add the peach slices to the pan with the jalapenos. Continue cooking for another 3 minutes until the peaches become tender.
  8. Pour the peach glaze into the pan, ensuring the jalapenos and peaches are well-coated with the mixture.
  9. Return the chicken to the pan, drizzling the glaze over the top of the chicken. Heat the chicken for an additional 1-2 minutes until it is thoroughly warmed.
  10. Serve while hot.
