Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together Greek yogurt, oil, egg, vanilla, and lemon zest.
- Combine the wet and dry ingredients until just mixed, then gently fold in blueberries.
- In a small bowl, mix brown sugar, cinnamon, and melted butter for the streusel topping.
- Fill muffin cups with the batter and sprinkle streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
