Description

A comforting twist on a classic baked potato, this loaded baked potato salad combines creamy, cheesy flavors with crispy bacon and scallions.


Ingredients

  • 4 large potatoes
  • 6 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 3 scallions, sliced
  • Salt and pepper to taste

Instructions

  1. Bake the potatoes at 400°F (200°C) for about 45-60 minutes or until tender. Let them cool and then dice them into bite-sized pieces.
  2. Cook the bacon until crispy. Chop it into small pieces.
  3. Combine the cooled potatoes, bacon, cheese, sour cream, mayonnaise, and scallions in a large bowl.
  4. Mix everything together until well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Consider adding diced pickles or jalapeños for a refreshing twist. This dish can also be made a day in advance for better flavor.
