A comforting twist on a classic baked potato, this loaded baked potato salad combines creamy, cheesy flavors with crispy bacon and scallions.
Ingredients

- 4 large potatoes
- 6 slices of bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 3 scallions, sliced
- Salt and pepper to taste
Instructions
- Bake the potatoes at 400°F (200°C) for about 45-60 minutes or until tender. Let them cool and then dice them into bite-sized pieces.
- Cook the bacon until crispy. Chop it into small pieces.
- Combine the cooled potatoes, bacon, cheese, sour cream, mayonnaise, and scallions in a large bowl.
- Mix everything together until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Consider adding diced pickles or jalapeños for a refreshing twist. This dish can also be made a day in advance for better flavor.
