Description

Crispy tater tots filled with smoky bravas sauce and topped with melted cheese, perfect for gatherings.


Ingredients

  • 48 frozen tater tots (about 1 pound)
  • Cooking spray or olive oil for greasing
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika (sweet)
  • 1/2 teaspoon smoked paprika (hot)
  • 1/4 teaspoon cayenne pepper (optional, adjust to taste)
  • 1 cup (240ml) tomato puree
  • 1/4 cup roasted red peppers, finely chopped
  • 1 teaspoon sugar
  • 1 teaspoon sherry vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 cup manchego cheese, shredded (or cheddar as a substitute)
  • 4 slices bacon, cooked and crumbled (optional for vegetarians)
  • 1/2 cup sour cream or garlic aioli
  • 2 tablespoons fresh parsley or chives, chopped
  • 1 teaspoon smoked paprika, for garnish

Instructions

  1. Preheat your oven to 425°F and grease a muffin tin with cooking spray or olive oil.
  2. Line the muffin tin with frozen tater tots, standing them on their sides to form cups.
  3. Bake the tater tots for 25-30 minutes until golden brown and crispy.
  4. In a skillet, heat 2 tablespoons of olive oil over medium heat and sauté the onion until soft and translucent, about 5 minutes.
  5. Add minced garlic and sauté for another minute.
  6. Stir in sweet smoked paprika, hot smoked paprika, and optional cayenne pepper.
  7. Pour in the tomato puree and let it simmer for about 10-15 minutes to thicken.
  8. Add roasted red peppers, sugar, sherry vinegar, salt, and pepper. Adjust seasoning to taste.
  9. Spoon bravas sauce generously into each tater tot cup.
  10. Top each cup with shredded manchego cheese.
  11. Return to the oven for a few minutes until the cheese melts.
  12. Garnish with sour cream or garlic aioli and sprinkle with fresh parsley or chives before serving.

Notes

Loaded Brava’s tots can be served as an appetizer or a main dish. For vegetarian variation, skip the bacon and add more vegetables.
