A delicious twist on classic meatloaf — tender beef layered with creamy loaded potatoes, bacon, cheddar, and chives for the ultimate comfort food mash-up.
Ingredients
2 pounds ground beef (85/15)
1 cup plain breadcrumbs
2 large eggs, lightly beaten
1 medium onion, finely diced
3 garlic cloves, minced
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese
6 strips bacon, cooked and crumbled (reserve 2 tbsp for topping)
¼ cup chopped chives (reserve 1 tbsp for garnish)
3 cups prepared mashed potatoes
½ cup sour cream
½ cup shredded cheddar cheese
2 tablespoons butter, melted
¼ teaspoon garlic powder
Salt and pepper to taste
½ cup shredded cheddar cheese (topping)
Reserved crumbled bacon
Reserved chopped chives
2 tablespoons sour cream (for serving)
Instructions
1. Preheat oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang.
2. In a large bowl, combine beef, breadcrumbs, eggs, onion, garlic, Worcestershire, mustard, thyme, salt, and pepper. Mix gently.
3. Fold in 1 cup cheddar, 4 tbsp crumbled bacon, and 3 tbsp chives. Mix lightly.
4. In another bowl, mix mashed potatoes, sour cream, ½ cup cheddar, melted butter, garlic powder, salt, and pepper.
5. Press half the meat mixture into loaf pan. Spread potato mixture on top, leaving ½-inch border. Cover with remaining meat, sealing edges.
6. Bake uncovered 50 minutes (internal temp 145°F).
7. Top with remaining cheese and bake another 10-15 mins to 160°F.
8. Rest 10 mins. Garnish with bacon, chives, and sour cream before slicing and serving.
Notes
Line pan with parchment for easy removal.
Don’t overmix meat to keep loaf tender.
Let rest 10 minutes before slicing.
Sub ground turkey or cauliflower mash for a lighter version.
