Description

A comforting loaded potato soup filled with hearty potatoes, rich cream, and savory bacon, perfect for chilly evenings.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and broth; bring to a boil.
  3. Reduce heat and simmer until the potatoes are tender.
  4. Mash some of the potatoes for a thicker consistency.
  5. Stir in the heavy cream, cheese, and season with salt and pepper.
  6. Serve hot, topped with crumbled bacon and chives.

Notes

Use high-starch potatoes for creaminess and consider an immersion blender for a smoother texture.
