- 2 medium acorn squashes
- 2 tablespoons olive oil (30 ml)
- 1 pound boneless, skinless chicken breasts (450 g)
- 2 cups fresh spinach (60 g)
- 4 cloves garlic, minced
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 teaspoon dried oregano (1 g)
- 1 teaspoon paprika (1 g)
- 1/2 cup shredded cheddar cheese (60 g)
- 1/4 cup grated vegan cheese (25 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half lengthwise and remove seeds.
- Brush the squash halves with 1 tablespoon of olive oil.
- Place the squash halves cut-side down on a baking sheet.
- Roast the squash in the oven for 25-30 minutes.
- While the squash is roasting, heat the remaining olive oil in a skillet over medium heat.
- Add the chicken breasts to the skillet and season with salt, pepper, oregano, and paprika.
- Cook the chicken for 6-8 minutes on each side, or until fully cooked.
- Remove the chicken from the skillet and chop it into small pieces.
- In the same skillet, add the minced garlic and sauté for 1 minute.
- Add the fresh spinach to the skillet and cook until wilted.
- Return the chopped chicken to the skillet and mix well with the spinach and garlic.
- Remove the roasted squash from the oven and turn them cut-side up.
- Stuff each squash half with the chicken and spinach mixture.
- Top each stuffed squash with shredded mozzarella and grated Parmesan cheese.
- Return the squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
