Ingredients

  • 2 medium acorn squashes
  • 2 tablespoons olive oil (30 ml)
  • 1 pound boneless, skinless chicken breasts (450 g)
  • 2 cups fresh spinach (60 g)
  • 4 cloves garlic, minced
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon paprika (1 g)
  • 1/2 cup shredded cheddar cheese (60 g)
  • 1/4 cup grated vegan cheese (25 g)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half lengthwise and remove seeds.
  3. Brush the squash halves with 1 tablespoon of olive oil.
  4. Place the squash halves cut-side down on a baking sheet.
  5. Roast the squash in the oven for 25-30 minutes.
  6. While the squash is roasting, heat the remaining olive oil in a skillet over medium heat.
  7. Add the chicken breasts to the skillet and season with salt, pepper, oregano, and paprika.
  8. Cook the chicken for 6-8 minutes on each side, or until fully cooked.
  9. Remove the chicken from the skillet and chop it into small pieces.
  10. In the same skillet, add the minced garlic and sauté for 1 minute.
  11. Add the fresh spinach to the skillet and cook until wilted.
  12. Return the chopped chicken to the skillet and mix well with the spinach and garlic.
  13. Remove the roasted squash from the oven and turn them cut-side up.
  14. Stuff each squash half with the chicken and spinach mixture.
  15. Top each stuffed squash with shredded mozzarella and grated Parmesan cheese.
  16. Return the squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  17. Remove from the oven and let cool slightly before serving.
