- Heat a cast iron pan over medium-high heat, adding butter and olive oil.

- When the underside turns golden brown, use a fish spatula to flip and continue cooking until opaque and completely cooked through—about 3-4 more minutes.
- Finish the cooking process by squeezing fresh lemon juice over the filets.
- Mix mayo, hot sauce, honey, salt, and pepper in a small bowl to create the zesty sauce.
