Ingredients

  • – 4 wide mouth mason jars with lids
  • – 2 cups (475 ml) cherry tomatoes, washed and halved
  • – 1 small red onion, diced
  • – 1 large orange bell pepper, diced
  • – 1 lb. (454 g) beef tortellini, cooked
  • – 4 cups (120 g) butter leaf lettuce, washed and patted dry (or lettuce of choice)
  • – 1/2 cup (75 g) beef feta cheese (or mini mozzarella balls)
  • – salt and pepper to taste
  • – 1/2 cup (120 ml) vegetable oil
  • – 1/4 cup (60 ml) fruit vinegar
  • – 2-3 Tbsp. (30-45 ml) lemon juice
  • – 2 cloves garlic, minced
  • – 2 tsp. (10 ml) Dijon mustard
  • – 1 tsp (5 ml). dried basil
  • – 1 tsp (5 ml). dried oregano
  • – salt and pepper to taste

Instructions

  1. Tortellini Preparation: Prepare the tortellini as instructed on the package, then drain and rinse with cold water to halt further cooking.
  2. Dressing Preparation: Combine all the salad dressing components in a sealed mason jar or bottle and shake well until mixed. Taste and tweak as needed (a touch of honey can be added for sweetness, if preferred).
  3. Assemble the Salad Jars: **Step 1:** Start by distributing the dressing evenly at the bottom of each wide-mouth mason jar. This method prevents the lettuce from becoming soggy, and when you later transfer the salad into a bowl, the dressing will coat all ingredients evenly.
  4. **Step 2:** Arrange the halved cherry tomatoes directly over the dressing layer.
  5. **Step 3:** Add the cooked tortellini over the tomatoes, then proceed to layer the orange bell pepper, feta cheese, and red onion in any order you prefer.
  6. **Step 4:** Tear the butter leaf lettuce gently and add it on top. Secure the jar with its lid and store it in the fridge until you’re ready to eat.
