- 3 tablespoons (45 ml) Creamy Vegan Avocado Dressing
- 1/3 cup (80 g) roasted sweet potato cubes*
- 1/4 cup (60 g) seasoned chickpeas, I just heat them in a pan and stir with cumin, garlic, salt and black pepper
- 1/4 cup (30 g) purple cabbage
- 1/3 cup (65 g) cooked quinoa
- 2 cups (60 g) mixed salad greens, washed, torn and dried
Instructions
- Begin by placing the purple cabbage at the base of the mason jar once it has cooled.
- Follow by adding a layer of seasoned chickpeas next.
- Introduce the roasted sweet potato cubes as the subsequent layer.
- Finish by topping with the mixed salad greens.
- If you wish to warm any components, separate them onto a plate and heat them individually.
