  • – 1 ½ lb (680 g) white fish fillet such as cod or halibut, (1 to 1 ½ in thickness)
  • – Kosher salt and ground black pepper
  • – Extra virgin olive oil
  • – Juice of ½ lemon more for later
  • – 8 ounces (227 g) cherry tomatoes, halved
  • – 3 ounces (85 g) pitted olives, halved
  • – 3 tablespoons (45 ml) minced red onion
  • – 4 to 5 garlic cloves, minced
  • – 1 tablespoon (15 ml) fresh thyme leaves
  • – 2 teaspoons (10 ml) dried oregano

Instructions

  1. Preheat your oven to 425°F.
  2. Dry the fish fillet with paper towels, then sprinkle both sides with kosher salt and pepper. Lightly coat a 9½ x 13-inch baking dish with extra virgin olive oil and place the fish inside. Drizzle the juice of half a lemon over the fish’s surface.
  3. In a medium bowl, mix together the halved cherry tomatoes, olives, minced red onion, garlic, thyme, and oregano. Season with a small amount of salt and pepper, then pour about 3 tablespoons of extra virgin olive oil over the mixture and stir well.
  4. Spread the tomato and olive mixture evenly over the fish in the baking dish.
  5. Place the dish in the preheated oven and bake for 15 to 20 minutes, adjusting the time based on the thickness of your fish.
  6. Take the dish out of the oven and serve immediately.
