Description

A flavorful one-pan dish combining tender chicken thighs with vibrant vegetables and aromatic herbs, inspired by Mediterranean cuisine.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken by patting it dry and rubbing both sides with smoked paprika, oregano, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken. Sear for 4–5 minutes on each side until golden brown and nearly cooked through. Remove from skillet and set aside.
  3. In the same skillet, lower heat to medium and add sliced red onion, red bell pepper, and zucchini. Sauté for 3–4 minutes until slightly softened.
  4. Add minced garlic, sun-dried tomatoes, cherry tomatoes, and olives. Cook for an additional 2 minutes until fragrant.
  5. Return the chicken to the skillet, pour in the lemon juice, cover, and let simmer for 5–7 minutes until fully cooked.
  6. Finish with crumbled feta and garnish with fresh parsley. Serve warm.

Notes

Serve with quinoa or crusty bread to soak up the juices. This dish is adaptable, allowing for seasonal vegetables to be swapped in.
