  • 1 teaspoon garlic powder (5 g)
  • Salt, to taste
  • Black pepper, to taste
  • 8 small flour or corn tortillas
  • 1 cup cherry tomatoes, quartered (150 g)
  • 1/2 cup diced cucumber (75 g)
  • 1/4 cup red onion, finely chopped (30 g)
  • 1/4 cup crumbled feta cheese (40 g)
  • 1/4 cup chopped fresh parsley (15 g)
  • 1/4 cup plain yogurt (60 ml)
  • 1 tablespoon tahini (15 ml)
  • 1 teaspoon lemon zest (2 g)
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken breasts into strips.
  3. In a bowl, mix olive oil, lemon juice, oregano, cumin, garlic powder, salt, and pepper.
  4. Add the chicken strips to the bowl and coat them with the marinade.
  5. Arrange the chicken on a baking sheet.
  6. Bake the chicken for 20-25 minutes or until cooked through.
  7. While chicken is baking, combine cherry tomatoes, cucumber, red onion, feta cheese, and parsley in a bowl.
  8. In a small bowl, mix plain yogurt, tahini, and lemon zest.
  9. Warm the tortillas in a dry skillet over medium heat.
  10. Once chicken is cooked, remove from oven and let it rest for 5 minutes.
  11. Slice chicken into smaller pieces if necessary.
  12. Place chicken pieces on each tortilla.
  13. Top with the tomato-cucumber mixture.
  14. Drizzle yogurt-tahini sauce over the top.
  15. Serve tacos with lemon wedges on the side.
