- 3 boneless, skinless chicken breasts
- 2 tablespoons olive oil (30 ml)

- 1 teaspoon dried oregano (5 g)
- 1 teaspoon ground cumin (5 g)
- 1 teaspoon garlic powder (5 g)
- Salt, to taste
- Black pepper, to taste
- 8 small flour or corn tortillas
- 1 cup cherry tomatoes, quartered (150 g)
- 1/2 cup diced cucumber (75 g)
- 1/4 cup red onion, finely chopped (30 g)
- 1/4 cup crumbled feta cheese (40 g)
- 1/4 cup chopped fresh parsley (15 g)
- 1/4 cup plain yogurt (60 ml)
- 1 tablespoon tahini (15 ml)
- 1 teaspoon lemon zest (2 g)
- Lemon wedges, for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the chicken breasts into strips.
- In a bowl, mix olive oil, lemon juice, oregano, cumin, garlic powder, salt, and pepper.
- Add the chicken strips to the bowl and coat them with the marinade.
- Arrange the chicken on a baking sheet.
- Bake the chicken for 20-25 minutes or until cooked through.
- While chicken is baking, combine cherry tomatoes, cucumber, red onion, feta cheese, and parsley in a bowl.
- In a small bowl, mix plain yogurt, tahini, and lemon zest.
- Warm the tortillas in a dry skillet over medium heat.
- Once chicken is cooked, remove from oven and let it rest for 5 minutes.
- Slice chicken into smaller pieces if necessary.
- Place chicken pieces on each tortilla.
- Top with the tomato-cucumber mixture.
- Drizzle yogurt-tahini sauce over the top.
- Serve tacos with lemon wedges on the side.
