- 1 cup (170g) couscous
- 1 1/4 cups (300ml) water
- 1/4 cup (60ml) olive oil
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon (5g) salt
- 1/2 teaspoon (1g) black pepper
- 1 cup (150g) cherry tomatoes, halved
- 1/2 cup (75g) cucumber, diced
- 1/4 cup (35g) red onion, finely chopped
- 1/4 cup (35g) green olives, pitted and sliced
- 1/4 cup (35g) beef cheese, crumbled
- 2 tablespoons (30g) fresh parsley, chopped
- 1 tablespoon (15g) fresh mint, chopped
Instructions
- Bring 1 1/4 cups of water to a boil in a medium saucepan.
- Add 1 cup of couscous to the boiling water, cover, and remove from heat.
- Let the couscous stand for 5 minutes or until water is absorbed.
- Fluff the couscous with a fork and transfer to a large bowl to cool.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Pour the dressing over the cooled couscous and toss to combine.
- Add 1 cup halved cherry tomatoes, 1/2 cup diced cucumber, and 1/4 cup chopped red onion.
- Add 1/4 cup sliced Kalamata olives and 1/4 cup crumbled feta cheese to the bowl.
- Sprinkle 2 tablespoons chopped fresh parsley and 1 tablespoon chopped fresh mint over the salad.
- Toss all ingredients together until well mixed.
- Adjust seasoning with additional salt and pepper if desired.
- Serve chilled or at room temperature.
