Ingredients

  • 1 1/4 cups (300ml) water
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons (30ml) lemon juice
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (1g) black pepper
  • 1 cup (150g) cherry tomatoes, halved
  • 1/2 cup (75g) cucumber, diced
  • 1/4 cup (35g) red onion, finely chopped
  • 1/4 cup (35g) green olives, pitted and sliced
  • 1/4 cup (35g) beef cheese, crumbled
  • 2 tablespoons (30g) fresh parsley, chopped
  • 1 tablespoon (15g) fresh mint, chopped

Instructions

  1. Bring 1 1/4 cups of water to a boil in a medium saucepan.
  2. Add 1 cup of couscous to the boiling water, cover, and remove from heat.
  3. Let the couscous stand for 5 minutes or until water is absorbed.
  4. Fluff the couscous with a fork and transfer to a large bowl to cool.
  5. In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  6. Pour the dressing over the cooled couscous and toss to combine.
  7. Add 1 cup halved cherry tomatoes, 1/2 cup diced cucumber, and 1/4 cup chopped red onion.
  8. Add 1/4 cup sliced Kalamata olives and 1/4 cup crumbled feta cheese to the bowl.
  9. Sprinkle 2 tablespoons chopped fresh parsley and 1 tablespoon chopped fresh mint over the salad.
  10. Toss all ingredients together until well mixed.
  11. Adjust seasoning with additional salt and pepper if desired.
  12. Serve chilled or at room temperature.
