Ingredients

- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/4 cup fresh parsley, chopped

Instructions
- Marinate the chicken in olive oil, lemon juice, garlic, and herbs for at least 30 minutes.
- Cook the brown rice or quinoa according to package instructions.
- Chop the vegetables into bite-sized pieces and toss with olive oil, salt, and herbs.
- Roast the vegetables at 425°F (220°C) for about 20 minutes or until tender and caramelized.
- Grill or sauté the marinated chicken until it reaches an internal temperature of 165°F (74°C).
- Slice the chicken into strips.
