Ingredients

  • 2 chicken breasts, marinated in olive oil, lemon juice, garlic, and herbs
  • 1 cup brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, and herbs for at least 30 minutes.
  2. Cook the brown rice or quinoa according to package instructions.
  3. Chop the vegetables into bite-sized pieces and toss with olive oil, salt, and herbs.
  4. Roast the vegetables at 425°F (220°C) for about 20 minutes or until tender and caramelized.
  5. Grill or sauté the marinated chicken until it reaches an internal temperature of 165°F (74°C).
  6. Slice the chicken into strips.
  7. Assemble the bowl with grains, chicken, roasted vegetables, and garnish with fresh herbs.
