Ingredients

  • 1 pound lean ground beef (90/10)
  • 3 tablespoons extra virgin olive oil
  • 1 large red onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, diced into half-moons
  • 1/3 cup kalamata olives, pitted and halved
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare all ingredients and have them ready before cooking.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook ground beef until browned, about 5-7 minutes. Remove to a plate.
  3. In the same pan, add more olive oil and sautรฉ red onion for 2-3 minutes. Add garlic and cook for 30 seconds.
  4. Add bell peppers and zucchini, cooking for 3-4 minutes until slightly softened.
  5. Return beef to pan. Add tomatoes, olives, and all dried spices. Cook 2-3 minutes.
  6. Remove from heat, add lemon juice, remaining olive oil, and fresh herbs. Top with feta cheese.
