- 1 pound lean ground beef (90/10)
- 3 tablespoons extra virgin olive oil
- 1 large red onion, thinly sliced
- 4 cloves garlic, minced
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, diced into half-moons
- 1/3 cup kalamata olives, pitted and halved
- 2 tablespoons fresh lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese
- Salt and freshly ground black pepper to taste
Instructions
- Prepare all ingredients and have them ready before cooking.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook ground beef until browned, about 5-7 minutes. Remove to a plate.
- In the same pan, add more olive oil and sautรฉ red onion for 2-3 minutes. Add garlic and cook for 30 seconds.
- Add bell peppers and zucchini, cooking for 3-4 minutes until slightly softened.
- Return beef to pan. Add tomatoes, olives, and all dried spices. Cook 2-3 minutes.
- Remove from heat, add lemon juice, remaining olive oil, and fresh herbs. Top with feta cheese.
Notes
- Use high-quality olive oil for best Mediterranean flavor.
- Donโt overcrowd the pan โ cook in batches if needed.
- Add fresh herbs at the end to preserve their flavor.
- Can be made ahead and reheated gently on stovetop.
- Stores well in refrigerator for up to 3 days.
