Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced fine
  • 1 tsp dried oregano (preferably Mediterranean oregano)
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp sweet paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp freshly ground black pepper

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, thyme, paprika, salt, and black pepper to create the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish, pour the marinade over and coat evenly. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat and clean the grates.
  4. Remove chicken from the marinade, allowing excess to drip off, and discard the marinade.
  5. Grill chicken for 6-7 minutes on each side, reaching an internal temperature of 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing and serving.

Notes

For deeper flavors, marinate for up to 24 hours. Serve garnished with fresh herbs or lemon wedges.
