  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add ground chicken and cook for 6-8 minutes, breaking it apart with a spoon until browned.
  3. Add the finely chopped onion and minced garlic; sauté until the onion is translucent, about 2-3 minutes.
  4. Stir in the chopped bell pepper, oregano, smoked paprika, and ground cumin, cooking for an additional 3-4 minutes.
  5. Add the halved cherry tomatoes and sliced Kalamata olives; cook for about 5 minutes until tomatoes release their juices.
  6. Sprinkle crumbled feta cheese over the mixture and stir gently to combine.
  7. Garnish with fresh parsley before serving warm.
