Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add ground chicken and cook for 6-8 minutes, breaking it apart with a spoon until browned.
- Add the finely chopped onion and minced garlic; sauté until the onion is translucent, about 2-3 minutes.
- Stir in the chopped bell pepper, oregano, smoked paprika, and ground cumin, cooking for an additional 3-4 minutes.
- Add the halved cherry tomatoes and sliced Kalamata olives; cook for about 5 minutes until tomatoes release their juices.
- Sprinkle crumbled feta cheese over the mixture and stir gently to combine.
- Garnish with fresh parsley before serving warm.
